I know it probably varies by the length of the courses. Can I have specific programs, how long they are, and how much they cost?

Isn’t it an odd choice of career ? It seems to me this kind of job goes to local people. Outdoors guides know the terrain, they know where to find animals depending on seasons, they can track animals, they can tell if bad weather is coming, they understand signs that are foreign to one who hasn’t lived most of his life in the wilderness. Those things are not taught in schools. You learn them through immersion.
You might want to get a feel of the job by going around outfitters to lay a fishing guide job for the summer. That would be a first step toward your goal: gain a minimum of practical experience (and then pursue).
You might also be interested in a travel agent career, one that accompanies groups, for instance for an african safari.
